VINEYARD Basarte

DEVELOPED OVER CENTURIES IN THE VILLAGES, WITH SECRETS PASSED FROM FATHER TO SON, TXAKOLI IS A MANIFESTATION OF POPULAR BASQUE CULTURE, WHICH ENHANCES ITS PARTICULAR LEGACY.

THE VINEYARD

Although the region and climate afford us limited production of our wine, it is this limiting of volume that allows us the opportunity to explore the concept or “Philosophy of Terroir”, in the development of our Txakoli wine.

The property is simply the vineyard surrounding the house, and the land where the grapes are grown,( an area of 4.5 hectors), is planted with native varieties of Hondarrabi Beltza, and Hondarrabi Zuri and offers a unique varietal grape, loaded with character, and expressed beautifully by Txakoli ADOS.

Situated on the side of the mountain, protected from the north wind and looking out to the Cantabrian Sea, provides a humid climate, and this in turn gives greater acidity and intensity to ADOS Txakoli.

The care and cultivation of the vineyards is done by hand, as we were taught by our elders, cultivating the vineyard in the traditional, manual and sustainable way, taking heed of every moment in the development of the grape, from flower, till harvest, and of course, without the use of herbicides!

WORKING IN THIS WAY REQUIRES MORE “PATIENCE”, OUR GOAL IS TO ACHIEVE THE HIGHEST QUALITY RAW MATERIAL, (NO EASY TASK), AND IS ALWAYS SUBJECT TO THE WHIMS OF NATURE.

HONDARRABI GRAPES

The vineyard produces 100% of the varieties Hondarrabi Zuri (“white”) and Hondarrabi Beltza (“ink”), both native to the Basque Country. It is a vigorous vine, flowering occurs around late May or early June, releasing an explosion of smells and sensations, and resulting in small cylindrical fruit, in compact clusters.

In Basarte we cultivate only these two varieties, native, one color in the palette and one color in the field. The land where they are cultivated provides the nuances of the fruit.

VINTAGE

In the wake of summer comes the most important moment: maturity comes in mid-October and then begins the harvest. It is our great party, which is the result of much work, effort and affection.

And it is with love with which we pick the grapes, gathered in 15 kilo boxes, and where the time between the vineyard and the winery is minimal, thus preserving its power and aromas.

The care needed for each part of the process of growing and maturation enable us to produce a unique TXAKOLI ADOS, An aromatic, powerful and exquisitely balanced broth.
